Banana-Sour cream cake (mix between cake and banana bread!)
w/ cream cheese frosting
1pkg yellow cake mix
3 eggs
1 C mashed ripe bananas (about 3)
1 C sour cream
1/4 C oil
1 pkg cream cheese softened
1/2 C (1 stick) of softened butter
1 pkg 16 oz. powered sugar (about 4 cups)
1 cup walnut pieces finely chopped *optional*
Heat oven to 350degrees. Beat cake mix, eggs, bananas, sour cream and oil with mixer on low until moistened. Scraping bottom of the bowl often. Beat on medium 2 min.
Pour into greased and floured 13x9 inch pan. Bake 35min, or until toothpick inserted in center comes out clean. Cook cake completely in pan on wire rack.
Beat cream cheese and butter with mixer on medium until blended. Gradually add sugar, beating well after each addition.
Removed cake from pan. Carefully cut cake crosswise in half using serrated knife.
Place 1 cake half top side down, on plate; spread top with frosting. Top with remaining cake half, top-side up. Frost top and sides
Press nuts onto sides. Refrigerate leftovers. (special extras: sprinkle top with additional chopped nuts.)

p.s. I made the cake and tasted it without frosting DELICious, then I realized the middle of mine was gooey (it had only cooked 31min... and my toothpick was in the dark, but i thought it was clean) so I stuck it back in for nearly 10more min, because the whole cake had cooled by then, so the final product was SUPER dry... sorry girls last night. Anyway should have had the taste i had the night before, YUMMMMMMMMMMO!
